To Cook
Place pasta in a saucepan of boiling water and boil for 9-11 minutes, stirring occasionally.

Recipes
Spirali with Tomato and Mascarpone Sauce
Serves 4
For this recipe you will need:
350g Spirali
1 Can of Chopped Tomatoes
2 tbsp Tomato Pur?e
2 Cloves of Garlic, crushed
1 Good sprinkling of Black Pepper and Salt
1 Handful of fresh Basil leaves, roughly torn
125g Mascarpone Cheese
1 Springkling of Grated Parmesan

1. Cook the Spirali pasta as per instructions.
2. Meanwhile, warm the olive oil in a large pan on a medium heat before adding the garlic and frying, stirring gently, for about a minute, until it is lightly golden but not burnt.
3. Carefully pour in the chopped tomatoes, then add a half can of water, the tomato pur?e, oregano and a sprinkling of salt and black pepper, and stir well.
4. Turn the heat down to a simmer for about 8 minutes, stirring occasionally, until the pasta is ready.
5. Now take a spoonful of the pasta water and put it into the tomato sauce, then drain off the rest of the water.
6. Add the mascarpone cheese and torn basil leaves to the tomato sauce too. Stir well.
7. Tip the cooked, drained Spirali into the tomato sauce, and gently mix them all together so that the pasta is thoroughly coated in the sauce.
Serve immediately with a sprinkle of cheese.
