Spring Onion and Tomato Pasta Salad

Shopping List
– 300g of Napolina Fusilli
– 1 bunch of spring onions
– 1 yellow pepper, de-seeded
– 150g of cherry vine tomatoes
– 75g of black olives
– Salt and ground black pepper
For the Dressing
– 100ml Napolina Olive Oil
– 2tbsp Napolina Balsamic Vinegar
– 1 clove of garlic, crushed
– 1 tsp of wholegrain mustard
– Handful of chopped flat leaf parsley
How to Make
#1 Cook the pasta in slightly salted boiling water for 9-11 minutes or until al dente. Drain and leave to cool.
#2 Finely chop the spring onions and yellow pepper. Halve the cherry tomatoes and mix together. Add the olives.
#3 Make the dressing by mixing all the ingredients together in a bowl.
#4 Mix the cooled pasta and spring onion together. Pour the dressing over the pasta and mix gently. Season with salt and ground black pepper.
