Sauce Facts
Tikka Masala is thought to be a British invention, but its true origins are firmly rooted in India as the restaurant favourite, butter chicken.
The chicken itself is normally marinated in a lovely spiced yoghurt base before being cooked to smoky perfection in a searing hot tandoor. It is then shredded and stirred into the masala.
The masala is a harmony of sweet, tart tomatoes and mellow spices, with hints of garlic and ginger. It is loved by all Indians, and is known to be the king of North Indian sauces.

Use these handy tips to customise your dish:
– Delicious with fish, seafood, duck and pork
– Also great with paneer, mushrooms and lentils
– Marinate skinned chicken thighs in the base sauce, grill for 8 minutes until charred, shred or chop up and finish off in the main sauce for a great smokey flavour
– Add some green chillies and green peppers for a karahi style dish

250g skinless, boneless chicken or paneer, seafood, vegetables, lamb or pork
From your cupboard:
1 tsp vegetable or olive oil
For extra heat, simply add the chilli
Original Tikka Masala
Recipe
Preparation: cut the meat, fish/seafood or paneer into generous pieces.
If you don’t like whole spices, powder these in a pestle and mortar and add them in at the end of step 3, alternatively if left whole remove them
with a spoon before serving.
1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds
2. Add meat or paneer and brown lightly. Add the base sauce and simmer for 1-2 minutes
3. Stir in the main sauce and more delicate ingredients (i.e. fish/seafood) and bring to a boil. Cook for 3-6 minutes or until
the main ingredient is cooked through
Serves 2-3 with The Spice Tailor Naans, rice or parathas
