Apricot & Pistachio Flapjacks
250g Flaked Oats
25g Half Spoon sugar
140g Dried Apricots
75g Pistachios
1/2 tsp Mixed Spice
150g Butter
2 tbsp Runny Honey
2 tbsp Golden Syrup
1 tsp Vanilla Bean Paste
(We Use Nielsen Massey)
– Melt the butter, syrup, honey, half spoon and vanilla paste in a saucepan on a gentle heat.
– Roughly chop the apricots and pistachios and mix with the oats and mixed spice. Add the melted butter mixture and stir until combined.
– Pour the mixture into a greased 18cm square baking tin and bake for 20-25 minutes at 180°C (fan 160°C/gas mark 4) until golden and a little crisp around the edges.
– Leave to cool in the tin for 10 minutes, then mark into 20 squares and leave to cool completely before removing.
