Sugar is a natural preservative so store me in a cool, dry place so I keep indefinitely.
Preparation and Usage
Smart Thinking:
If you ever drop eggshell into your cake mixture, use a larger piece of the shell to scoop it out.

Sugar Inspiration: No. 1
Lemon Cake
275g Self Raising Flour, Sifted
225 Softened Butter
225g caster sugar
4 Medium Eggs
1 tsp Baking Powder
2 tsbp Milk
1 Lemon, Zest & Juice
1 tbsp Lemon Curd
Combine the ingredients in a large bowl and beat until thoroughly blended.
Spoon the mixture into a greased 7×11 inch tin and bake at 180°C (fan 160°C / gas mark 4) for 25 mins or until the cake has risen and the top springs back when lightly pressed.
200g icing sugar
3-4 tsbp Lemon Juice
Sift the icing sugar into a bowl and gradually add the lemon juice until the icing becomes thick and glossy. Spread or drizzle on top of the cooled cake.
