I wanted to take fajitas to the next level and took inspiration from one of my favourite Mexican dishes ‘Puerco al horno con salsa de chile ancho y miel’. I created a blend of chipotle and ancho chillies to produce a sweet and smoky flavour – perfect for fajitas. Team up with chicken and vegetables, roll it up in a warmed tortilla and you’re good to go in less than 15 mins.”

Preparation And Usage
You'll Need:
Capsicana large tortillas, 300g Chicken (strips), 1 Onion (chopped), 1 Pepper (sliced)
1. Add 300g of chicken strips, a chopped onion and pepper to a pre-heated frying pan with 1 tbsp of oil and fry for 8-10 minutes over a medium heat, turning occasionally until the chicken is cooked through.
2. Add the paste and stir through, adding 1-2 tbsp of water to achieve the desired consistency.
3. Cook for 1-2 minutes.
4. Serve immediately with warmed tortillas.
